Read moreQ : "Hey, there are only 3 types."
A That's right. There are three main types of tea:
Q : "What's the difference?"
AIt is categorized according to how the oxidizing enzymes in tea leaves work in the pre-manufacturing stage (differences in processing methods).
Q "What is unfermented tea?"
A: Tea leaves are steamed, roasted, boiled, etc. to first stop the action of the oxidase in the leaves.
There are steamed (Japanese style) and pan-fried (Chinese style).
In particular, steaming in Japan is actually a method of tea production that has been refined uniquely to Japan. Steaming produces green tea with a beautiful green color, and it is a manufacturing method that allows you to obtain healthy ingredients such as catechin and teyanin.
In particular, deep-steamed tea is called the Kakegawa Study , where we investigated the evidence on the health benefits of tea for 10 years from 2009 to 2019 in Kakegawa, where we are from. This led to the proof of the effects of "anti-cancer action", "arteriosclerosis inhibitory action", "insulin sensitivity control action", "anti-allergic action", "anti-inflammatory action" and "obesity control action".
Q "What is semi-fermented tea?"
It is processed by utilizing A oxidase to some extent.
Depending on the degree of oxidase activity, there are Baozhong tea (mild) and Oolong tea (moderate).
Nowadays, more and more domestic producers are producing semi-fermented tea such as oolong tea. We sell Makinohara black oolong tea.
Q "What is fermented tea?"
It maximizes the function of A oxidase. It is a tea that has been oxidized rather than fermented.
Domestic black tea is also being manufactured in tea-producing areas all over the country, taking advantage of the characteristics and varieties of the production area! Our company also tastes and sells various domestic black teas, but we are currently closed...
Q : There are many different names for tea, so I don't really know.
ATypes of tea are broadly classified according to cultivation and processing methods: sencha (which is divided into ``normal sencha'' and ``deep steamed sencha'' depending on the degree of steaming), kabusecha, gyokuro, bancha, gyokuryokucha, and tencha.
Q "Hmm, it depends on the processing method."
AIn addition to this, there are powdered tea, stem tea, stick tea, bud tea, and tamacha, which are produced at the stage of processing from crude tea to finished tea.
In addition, tencha is processed into matcha, and roasted sencha and bancha are roasted or roasted rice is added, and there are also genmaicha and so on.
Most of the tea produced in Japan is sencha (including deep steamed sencha), which accounts for about 80% of the total production.
Q "What is called ordinary sencha?"
A : The tea leaves are steamed and dried while being kneaded.
At our garden, we mainly focus on deep-steamed sencha. This is because my great-grandfather had the opportunity to start producing deep-steamed sencha.
At our company, Yame no Hoshi and Yame scent are tea leaves that are close to regular sencha.
Q "What is called Fukamushi Sencha?"
Method A is the same as regular sencha, but the tea leaves are steamed for 2-3 times longer, resulting in a distinctive flavor.

Q: You often hear it called Kabusecha, don't you?
A: This tea is produced in the same way as sencha, using tea leaves grown in a tea garden covered with straw or cheesecloth around 7 days before plucking.
Q “I often hear about gyokuro, but what is it like?”
From the time when the first buds of A first tea grow, the tea leaves are plucked from the tea garden (Oshishitaen), which is almost completely shaded from the sun by covering the tea garden with straw and cheesecloth on reed trays, etc. The tea produced in

AA type of semi-fermented tea that is lightly fermented (oxidized). Mainly made in Taiwan.
